We have about 5M documents and reindex time (using one dedicated instance of solr) is very long (it takes more than 2 days). I have to index both metadata and content with cross-language enabled.

I did it for a customer with ~25 million documents in the past to pre-build the index in a test environment. Step 1 and 2 are the same, but in between step 3 and 4 I would manually delete the any transactions after the migration from the new index, because when you do the migration anew from a more up-to-date backup, the transaction IDs

The reason why it may be more stable sometimes to go via an intermediary version is because some of the patches may not work / have been tested with specific data states of earlier versions, causing minor to blocking issues.
